Red Lentil Tacos

I made these red lentil tacos tonight and they tasted amazing and were really simple to make! 


Here is the recipe: 

2 cups of dry red lentils (I got mine at Trader Joes)
1 can Refried beans
1 packet taco seasoning
Corn tortillas
Taco toppings: olives, tomato, avocado, lettuce, salsa, etc.

Bring 2 cups lentils to a boil with 4 cups of water. When it starts to boil turn down the heat and add the taco seasoning. Let it simmer until it's a good consistency- about 10 minutes. 

Heat the Refried beans in a separate pot on the stove on low until they are heated through- about 2-3 minutes. 

When the lentils and beans are cooked get your corn tortillas out. Place some Refried beans and lentils in the corn tortilla and then fold in half. Cook the corn tortilla on a skillet until it starts to brown and get crisp. Turn it over and repeat. 

When both sides are brown and crisp remove the taco. Fill it with your favorite toppings and you've got yourself a plant- based taco! Pair them with some fruit and enjoy! My whole family loved these!
